How to: make the best ever choc chip cookies

Ingredients
110g unsalted butter
130g caster sugar
60g soft brown sugar
1 tsp vanilla extract
1 egg
110g plain flour
½ tsp baking powder
½ tsp salt
225g dark chocolate, chips or coarsely chopped
150g chopped walnuts.

1. Cream together the butter, caster and brown sugars
and vanilla until fluffy.
Beat in the egg.
Sieve the flour with the baking powder and salt and
fold into the creamed mixture,
followed by the chocolate and walnuts.
Cover and chill for an hour.
2 Heat the oven to 160°C (320°F) gas mark 3.
Roll the mixture into small balls, about the size of a walnut.
Place the balls on a baking tray, spaced about 4cm apart,
and bake for about 12 minutes.
Cool on a wire rack before storing in an airtight container.
Makes about 25 biscuits
